ACC is looking for you Join a team that puts you first GENERAL SUMMARY: The Culinary Services Manager is responsible for the overall operation of ACC Care Center’s Dining Services department.

The position oversees the coordination of the Dining Services Staff, follows the Dining Services Department budget, and ensures dietary and nutritional excellence for residents.

The Culinary Services Manager reports directly to the ACC Care Center Administrator and has a consulting relationship with the Culinary Services Manager, ACC MTV.

The Culinary Services Manager position is an exempt, full-time position.

ESSENTIAL JOB FUNCTIONS: Manages the preparation of food within established systems according to the master menu plan.

Standardizes recipes and expands menus.

Implements preparation and serving methods and handling techniques in order to ensure quality control.

Responsible for the maintenance of overall safety and sanitation of the Dining Services Department.

Oversees the purchasing of food, supplies, and small equipment according to established specifications and procedures while maintaining adequate dietary inventory.

Is responsible for deliveries, correct invoices and dietary budget.

Participates in multi-disciplinary resident care planning, including: visits to residents, completes nutrition assessments, documents the nutritional care of residents including maintaining tray cards, diet lists, and diet counts, and supervising the serving of prescribed diets.

Responsible for supervising and performing functions according to company policies and department procedures manuals.

Is responsible for updating dietary manuals annually.

Serves as alternate dietary staff as required.

Complies with all provisions in the Health and Insurance Portability Act (HIPAA).

Full compliance with the policy is a condition of employment.

Responsible for hiring, orienting, training, coaching, counseling, promoting, evaluating and employment decisions for the department.

Responsible for the supervision and organizational structure within the department.

Delegates and follows-up in an appropriate manner to ensure quality, equity, and consistency within the department.

Is accountable for maintaining the department’s budget and is fiscally responsible in accordance with those budgets and policies.

Other duties and / or special business projects may be assigned as needed REQUIREMENTS: Must be a Certified Dietary Manager.

Knowledge of food service preparation principles, sanitation and safety standards for institutional kitchens.

Knowledge of Skilled Nursing regulations preferred.

Basic knowledge of therapeutic diets.

Knowledge of the requirements for providing a daily diet to meet the needs of the residents.

Knowledge of and ability to plan menus, with direction as needed from a qualified consultant.

Knowledge of selecting, storing, preparing, and serving food in a safe and healthful manner.

Demonstrated experience in preparing meals for twenty-five or more people, and catering of special events, is preferred.

Flexibility and willingness to work evenings or weekends as needed.

Must be at least 18 years of age.

Certified in first aid, or able to complete certification training.
